1、 Product Introduction
In the fields of food, medicine, cosmetics, and agricultural products, water activity (aw) and moisture content are two core parameters that determine product stability, shelf life, microbial safety, and sensory quality. Although moisture content reflects the total amount of water in a sample, what truly affects microbial growth, chemical reaction rate, and physical stability is the "availability" of water - that is, water activity. For example, if two products with similar water content have different water activities, their decay rate may vary greatly. Therefore, measuring only water content is not sufficient to comprehensively evaluate product safety, and measuring water activity alone is difficult to guide drying or rehydration processes. Only by synchronously and accurately measuring water activity and moisture content can a complete basis be provided for formula design, process optimization, shelf life prediction, and quality control.
To this end,Water activity and moisture content detectoremerge as the times require. This instrument integrates high-precision capacitive/resistive water activity sensors and a fast halogen heating weighing system (or near-infrared/NIR technology), which can automatically measure two key indicators in the same testing process: first, the water activity of the sample in a constant temperature environment is accurately measured by the equilibrium vapor pressure method (aw, usually in the range of 0.00-1.00), and then its water content (%) is synchronously calculated by thermogravimetric or spectroscopic methods. The device is equipped with intelligent temperature control, 7-inch touch screen, data storage, printing, and USB/network interfaces, which comply with international and domestic standards such as ISO 21807, AOAC, GB, etc.
