Principle of Method 2: Milk contains 4% to 6% lactose, which is broken down into lactic acid by microorganisms, increasing the acidity of milk. The normal acidity values for fresh milk, pasteurized milk, and sterilized milk are between 160T and 180T. Milk with acidity above 180T is considered stale. Unfresh milk will have flocculation phenomenon, which can be clearly displayed under the action of a certain concentration of alcohol.

3. Testing materials: flocculation reagent and test tube.

4 Operation method: Take 1mL of milk into a test tube, add 1mL of milk freshness flocculation reagent, gently shake and observe.

5. Result judgment: If there is a phenomenon of flocculent aggregates hanging on the wall in the test tube, it indicates that the acidity of the milk is higher than 180T and it is not fresh milk. If necessary, the specific acidity value can be determined using the "acidity titration method".

6. Product storage and shelf life: Reagents should be stored at room temperature.
