Physical and chemical properties: white, pale yellow, or yellow, transparent or semi transparent, shiny, brittle flakes or powder particles. Almost odorless and tasteless. Insoluble in cold water, it can absorb 5~10 times the weight of water to expand and soften, soluble in hot water, cold into gel, soluble in acetic acid, glycerol aqueous solution. 10%~15% solution forms gel.

The purpose is hydrophilic colloid, which has a protective colloid effect and can be used as a stabilizer and emulsifier for hydrophobic colloids. It is a amphoteric electrolyte that can condense charged particles into blocks in water, making it a clarifying agent for alcoholic beverages and spirits.
