This instrument will display the variation of the product's water activity with changes in moisture absorption and desorption. Using mirror condensation dew point technology, collect hundreds of data within 48 hours to generate high-resolution moisture adsorption isotherms. The easy-to-use software program simplifies data collection and analysis. The relationship between water activity (aw) and water content at a specific temperature in DDI&DVS isotherms is called the water adsorption isotherm. For each sample, at different moisture contents, the relationship between water activity and moisture content is very complex and one-dimensional due to the different interactions between water and solid components (numerology, capillary action, surface effects). An increase in water activity aw is usually accompanied by a non-linear increase in water content. The water adsorption isotherms of most foods are S-shaped, while some foods containing a large amount of sugar or small water-soluble molecules have J-shaped isotherms.


The uses of isotherms include: phase change, bonding or agglomeration, texture change, shelf life, kinetic research, and packaging condition selection. Set indicators to determine the most stable water activity value of food, predict the reaction and texture changes at the end of shelf life. The impact of harsh storage environments such as high temperature and humidity on shelf life in measuring stability prediction highlights the details. Traditional isotherm data collection has limited data points. The AquaLab VSA analyzer can collect hundreds of data points to guide the formulation display of ingredients or the impact of formulation changes on the product. In DDI mode, AquaLab VSA will immerse the sample in saturated water vapor for moisture absorption and in dry air for desorption. As the sample dynamically absorbs and loses moisture, the instrument directly measures the change in relative humidity of the sample through a dew point sensor, and tracks the weight change of the sample in real time through a precision balance, thereby generating a data rich moisture adsorption isotherm. AquaLab also offers traditional DVS isotherm generation methods in DVS mode. The DVS moisture adsorption analyzer sets the humidity to a specific value and maintains the sample at that humidity to achieve water vapor equilibrium. In DVS mode, the isotherms generated by VSA are equivalent to those generated by existing moisture adsorption analyzers. By using the DVS method, the following fields can be analyzed and studied: adsorption kinetics, moisture diffusion coefficient, product surface area and pore size, packaging requirements, packaging desiccant requirements, maximum moisture absorption, moisture migration, and crystallization.
