Carboxymethyl lysine standardCML is an important Maillard product formed in the body during food processing and heating, and can therefore be used as a biomarker for food heat damage. A competitive enzyme-linked immunosorbent assay (ELISA) has been developed to detect CML modifications on proteins. CML protein was synthesized and anti CML serum was prepared, which specifically recognizes CML modifications on CML protein and proteins incubated with various carbohydrates. Heated milk and formula samples can be directly detected by ELISA without further purification procedures, and CML content can be determined based on reaction time and heating conditions. Positive results were confirmed by SDS-PAGE/Western blotting using the same serum. ELISA has been proven to be a rapid, specific, and easy to operate method for evaluating the formation of CML in heated dairy products. In addition, SDS-PAGE/immunoblotting can also help detect CML in insoluble food proteins.

Melard reaction products (MRP) are indicators of food heat treatment and also indicators of nutritional quality. They also naturally appear in the human body in the form of advanced glycation end products (AGEs). Therefore, they are indicators of physical health and disease processes, including inflammation, diabetes, cancer and aging. Therefore, AGEs have received widespread attention in cosmetics, biochemistry, food, and pharmaceutical applications.

This material is provided in the form of salts containing acid counterions of varying concentrations. The net content of each batch is indicated in its respective analysis certificate.
