Honey contains various acids, including both organic and inorganic acids, making it weakly acidic with a pH of 4-5. The acidity of honey can indicate its adulteration and freshness, and is an indicator of its quality. The lower the acidity of honey, the better its quality and taste. The national regulation stipulates that the acidity value of honey should be ≤ 40ml/kg. Currently, there are a large number of fake and inferior honey on the market. To effectively distinguish between real and fake honey, the acidity of honey can be used as an important detection indicator. This rapid testing kit is suitable for rapid on-site detection of honey acidity.
【 Detection Principle 】
Immature honey, honey with high moisture content, honey processed or stored improperly, and adulterated honey are prone to fermentation and acid production under the action of yeast. Titrate with sodium hydroxide standard solution and display the endpoint with phenolphthalein indicator to obtain the acidity value in the sample.

Take a sample of 2.0g in a triangular flask, add 20mL of purified water and mix well. Take another 20mL of purified water and place it in another triangular flask as a blank. Add 3 drops of indicator to each flask and titrate with the measuring solution until pink appears. After subtracting the number of drops V0 of the blank solution from the number of drops V of the titrant consumed by the sample, if the difference in the number of drops of the titrant is more than 14 drops, it is considered positive and exceeds the standard. The specific acidity value can be calculated according to the following formula: acidity (ml/kg)=(V-V0) ╳ 3V - the number of drops of titrant consumed by the sample V0- the number of drops of titrant consumed by the blank
【 Precautions 】
1. Pay attention to the vertical downward titration of the dropper bottle during titration to reduce errors.
When the number of drops of titrant consumed differs from the specified value by 1 or 2 drops, the presence of on-site operational errors should be taken into account, and laboratory precision measurements can be sent.
