Most of them are soluble in water and dilute salt solutions with pH 4.0~4.6. The solubility is high at pH 6.0 or higher.
Secondly, it was found that alpha po alpha lactalbumin, which binds to fatty acids, has a selective apoptotic effect on some tumor cells. This conclusion suggests a possible protective effect of milk on lactating offspring. These active biological functions are still unclear, as the disruption of the mouse alpha lactalbumin gene suggests that the biological role may be in lactose synthesis. However, the possibility of other functional roles in other mammals cannot be ruled out.
