Acetylcholinesterase is highly sensitive to organophosphate pesticides, and trace pesticide residues can be detected based on the inhibition of enzyme activity. Butyl acetylcholinesterase can catalyze the hydrolysis of indophenol acetate (red) into acetic acid and indophenol (blue). Organophosphorus pesticides have an inhibitory effect on butyrylcholinesterase, causing changes in the process of catalysis, hydrolysis, and discoloration. This can determine the presence of excessive amounts of organophosphorus pesticides in the sample.
　　
Sulfur containing organophosphate insecticides are commonly used pesticides in grain production, most of which have high toxicity. The use of bromine preparations (pesticide residue rapid detection enhancer) for oxidative pretreatment of grain sample extracts can significantly reduce the detection limit of such pesticides and improve the sensitivity of butyrylcholinesterase detection for such pesticides.
