Bisphenol compounds and their derivatives are widely used in the production of high molecular weight materials such as polycarbonate, epoxy resin, polyester resin, phenolic resin, etc., such as the production of epoxy resin and polycarbonate in food contact materials. Many bisphenol substances and their derivatives have estrogen like effects and can interfere with the normal functioning of the endocrine system in organisms. Due to the adverse effects of BPA, many countries have enacted laws and regulations to restrict or prohibit the use of BPA, thereby accelerating the development and production of bisphenol A analogues (BPs). For example, BPF, BPS, BPM, BPP, BPAP, BPZ, TBBPA, TCBPA are a group of compounds with structures similar to bisphenol A, which are used as raw materials in industrial products. If their chemical reactions are not complete and the cross-linking of the raw materials is not sufficient during the production process, it may lead to the residue of the aforementioned bisphenol A analogues. Frequent contact with packaging materials during the production of Baijiu may lead to the migration of bisphenols. Therefore, it is necessary to establish detection methods for bisphenols and their derivatives in Baijiu to ensure the food safety and quality of Baijiu.
The liquid chromatography-mass spectrometry (LC-MS) detection method is simpler, more convenient, and faster than the gas chromatography-mass spectrometry (GC-MS) detection method. It does not require derivatization and has a wider dynamic range. It can simultaneously detect different concentrations of bisphenol A and its metabolites in samples, and can obtain more accurate detection results for both trace levels and higher concentrations of bisphenol A substances.
