The MJ gluten analyzer is a specialized instrument used to determine the gluten content and quality (gluten index) of flour. It consists of two independent instruments: a single head gluten washing instrument (containing an internal gluten index analyzer) and a drying instrument. It is suitable for the determination of wheat flour and whole wheat flour and is widely used in food and flour processing, grain and oil research institutions, grain storage and other departments.
The working principle of gluten analyzer:
10g of flour or whole wheat flour is mixed with 5ml of salt water in a washing cup with a sieve for 20 seconds to form a dough, and then washed with salt water for 5 minutes to obtain gluten. Under centrifugal action, the wet gluten content and gluten index can be calculated according to the method specified in GB/T5506-2008.
