Specifically, the relationship between water activity and food safety can be explained from the following two aspects:
A. From the relationship between enzymatic reactions and food water activity, the effect of water activity on enzymatic reactions is a combination of two aspects: on the one hand, it affects the mobility of substrates in enzymatic reactions, and on the other hand, it affects the conformation of enzymes. Most enzyme substances in the food system experience a significant decrease in activity when their water activity is less than 0.85, such as amylase, phenoloxidase, and polyphenol oxidase.
But there are also some enzyme exceptions, such as esterases that can cause hydrolysis of triglycerides or diglycerides at a water activity of 0.3 or even 0.1.
B. From the perspective of the relationship between microbial activity and food water activity, all types of microorganisms require a certain level of water activity for growth. In other words, only when the water activity of food exceeds a certain critical value, can specific microorganisms grow. Generally speaking, most bacteria have a tolerance of 0.94-0.99, most fungi have a tolerance of 0.80-0.94, most salt tolerant bacteria have a tolerance of 0.75, and dry mold and high osmotic pressure yeast have a tolerance of 0.60-0.65. When the water activity is below 0.60, the vast majority of microorganisms cannot grow.
