Sugar making technology refers to the production of finished sugar from sugarcane and sugar beets, as well as the refining and processing of various refined sugars from raw sugar or granulated sugar. Sugar production requires multiple steps including extraction of sugarcane juice/beet juice, purification, crystallization, and refinement. Each production process requires strict quality control, including sugarcane/beet pretreatment, crude sugar production, products such as molasses, syrup, and crystalline sugar, alcohols, and by-products such as sugarcane bagasse or beet bagasse. Near infrared spectroscopy technology has been widely used both domestically and internationally due to its non-destructive, easy to operate, large processing capacity, objective and accurate, fast and pollution-free advantages. It can be used in laboratories of sugar factories as well as for online monitoring in the production field.
