5-step operation of food freeze dryer: standardized process from pre freezing to discharging

Step 1: Sample pre freezing - freezing quality determines drying effect
Core objective: Freeze the sample, fix the cell structure, and avoid collapse during sublimation drying.
Operation points:
Pre freezing temperature:Food freeze dryerSet 5-10 ℃ lower than the eutectic point of the sample (if the eutectic point of the fruit is about -25 ℃, pre freeze to below -30 ℃).
Pre freezing time: Adjust according to the thickness of the sample (e.g. 5mm thick fruit slices need to be frozen for 4 hours, 10mm thick slices need to be frozen for 6 hours).
Freezing method: Priority should be given to using quick freezing racks or liquid nitrogen freezing to reduce the size of ice crystals (the larger the ice crystals, the larger the pores after drying, and the poorer the rehydration property).
common problem:
Incomplete pre freezing: causing the sample to swell or discolor during drying → extending the pre freezing time until the center temperature of the sample meets the standard.
Excessive ice crystals: affecting rehydration → switch to quick freezing or add antifreeze agents (such as seaweed sugar).
Step 2: Loading and Equipment Preparation - Ensure Sealing and Uniformity
Core objective: To avoid uneven heating of the sample and prevent external moisture from entering.
Operation points:
Loading capacity: The thickness of the sample in the tray is ≤ 10mm (excessive thickness can prolong the drying time by more than 30%).
Tray spacing: Maintain a gap of 5-10mm to facilitate steam escape.
Equipment inspection: Confirm that the temperature of the cold trap has dropped below -40 ℃ and the oil level of the vacuum pump is normal (at 1/2-2/3 of the oil mirror).
common problem:
Overloading: causing uneven drying → reducing the amount of single loading or increasing the number of pallets.
Poor sealing: The vacuum degree cannot meet the standard. Check if the door seal is aging, replace it, and vacuum it again.
Step 3: Vacuum pumping and sublimation drying - control temperature and pressure balance
Core objective: To directly sublime ice into water vapor at low temperatures and pressures, while retaining its nutritional components.
Operation points:
Vacuum extraction time: Within 20 minutes, reduce the pressure inside the cabin to below 50Pa (excessive pressure can cause a decrease in sublimation rate).
Sublimation temperature:
Initial stage: Maintain at -30 ℃ to -25 ℃ (to avoid sample melting).
Late stage: Heat up 2-3 ℃ every 2 hours, eventually reaching 0 ℃ (to accelerate residual moisture analysis).
Cold trap temperature: Maintain below -50 ℃ throughout the process (to prevent water vapor from condensing outside the cold trap).
common problem:
Vacuum fluctuation: Check if the vacuum pump leaks oil or if the cold trap freezes too thick → Clean the cold trap and replace the pump oil.
Sample collapse: melting caused by high sublimation temperature → lowering the temperature and prolonging the stage time.
Step 4: Analyze drying - remove residual bound water
Core objective: To completely remove 10% -15% of bound water from the sample and extend its shelf life.
Operation points:
Temperature setting: Raise the temperature to 20-30 ℃ (excessive temperature can cause degradation of thermosensitive components).
Time control: Adjust according to the sample type (such as 4-6 hours for coffee and 8-10 hours for meat).
Pressure monitoring: Maintain cabin pressure ≤ 20Pa (pressure rebound may indicate incomplete resolution).
common problem:
Excessive residual moisture: leading to microbial growth → prolonging analysis time or increasing temperature rise (but not exceeding 35 ℃).
Sample discoloration: Analyze if the temperature is too high → reduce the temperature and shorten the single heating interval.
Step 5: Discharge and post-processing - sealed and stored to prevent moisture absorption
Core objective: To avoid moisture regain in freeze-dried samples and maintain a crispy texture.
Operation points:
Discharge timing: Open the compartment after the temperature inside has dropped to room temperature (to prevent condensation from dripping).
Packaging method: Use aluminum foil bag+desiccant, vacuum or nitrogen sealed (oxygen will accelerate oxidation and deterioration).
Residual moisture detection: rapid method (weighing method: mass difference before and after drying ≤ 3%; or use a moisture analyzer).
common problem:
Sample moisture absorption and agglomeration: Insufficient packaging sealing → Use double-layer aluminum foil bags or add deoxidizer.
Hardiness in taste: Excessive analysis leads to collapse of porous structures → shortening analysis time or lowering temperature.
