Does your cashew nut baking color not meet the standard?
Date: 2025-12-03Read: 18

You see a batch of roasted cashews and think they look flawless - but the flavor tester disagrees and the shelf life is unstable. If your quality inspection team relies solely on visual inspection, there will be blind spots in their work. Inconsistent baking color means product waste, customer dissatisfaction, and loss of revenue.

HunterLab's two tools - Aeros and SpectraTrend HT - will help you achieve your color goals accurately, making the quality inspection process rigorous, efficient, and repeatable.

From raw materials to finished products: possible stages of color difference

Let's review the typical cashew roasting process, where color differences may occur at any stage

  1. Preprocessing stage:After sorting and cleaning the nuts, adjust the moisture content to 5-7%. Excessive moisture leads to a light baking color, while insufficient moisture accelerates coking.

  2. Optional blanching process:After steam peeling, it needs to be re dried to a moisture content of 5%. Uneven moisture content in this process will lead to loss of uniformity in baking.

  3. Baking stage

  4. Cooling seasoning:Improper cooling affects appearance and texture.

  5. Quality Inspection and Packaging:Although visual inspection and moisture content testing are helpful, it is difficult to detect subtle color differences, and often it is too late.

At this point, objective color measurement technology can play a crucial role.

Aeros and SpectraTrend HT - A more suitable spectrophotometer for nut products

HunterLab offers two solutions based on your production configuration.

HunterLab Aeros (desktop, batch testing)

Suitable for laboratory sampling or quality control consoles.

  • Non contact automatic height sensor can handle irregularly stacked cashews - no need to press

  • The rotating platform can collect 35 color measurements of approximately 27.5 square inches within 5 seconds and average them into one reading, ensuring consistent and reproducible results.

  • One click operation to obtain complete L, a, b data, Δ E qualified/unqualified judgment, and built-in display screen - no need for a computer

  • Built in index and connection function: export results through USB and Ethernet, or transfer data streams to LIMS/SPC system

  • Intelligent design: sealed optical system, durable touch screen, easy to clean structure, and remote support

Aeros makes color control fast, easy, and precise - suitable for batch testing or laboratory environments.

SpectraTrend HT (Online Real time Monitoring System)

Specially designed for production lines or continuous baking furnaces

Non contact dual sensors for rapid and continuous measurement of color and sample height

Up to five readings per second, accurate detection even on uneven surfaces

Compact and sturdy industrial grade reinforced design (NEMA 4/IP66 protection level), suitable for harsh production environments

Laboratory level color data ensures consistency between online readings and desktop instrument results

Easy integration: Supports Ethernet or PLC connections, compatible with colorWorkbench software for process control

SpectraTrend HT ensures that the entire baking line always meets specifications and captures drift phenomena in a timely manner before problems occur.

How to solve the practical quality inspection problems of nut manufacturers

1. Objective color data

Adopt threshold values of L *=68 ± 2, a *=7 ± 1, b *=20 ± 1, and Δ E<2. Both devices are capable of capturing subtle color differences that are imperceptible to the naked eye.

2. Reduce waste

When the color deviates from the target value, the instrument will immediately sound an alarm - you can adjust the baking parameters or transfer batches in a timely manner to avoid the entire batch being scrapped.

3. Speed and efficiency

Aeros provides readings suitable for laboratory use within 5 seconds. SpectraTrend HT transmits data in real-time without affecting production - no sample preparation required, zero latency.

4. Traceability and Compliance

Both systems can provide accurate chromaticity data. Aeros supports exporting reports, and SpectraTrend HT can integrate SPC dashboards to meet audit needs at any time.

5. Stable shelf life

Uniform baking color is closely related to moisture reduction and Maillard reaction control, ensuring the stability of flavor, texture, and shelf life.

Real results: injecting precise control into nut baking

Your goal, our solution:

  • Set your target color parameters.

  • Use Aeros for batch production.

  • SpectraTrend HT provides real-time monitoring of the production line.

Reduce the defect rate by 30%, reduce baking variability by 20%, and improve customer satisfaction through quantifiable colors.
