The application prospects of thermal flow differential scanning calorimeter in the food industry
Date: 2025-12-11Read: 0
Differential scanning calorimeter is an efficient thermal analysis instrument used to study the thermal properties of materials, widely used in fields such as chemistry, materials, food, pharmaceuticals, and polymers. The basic principle is to analyze the thermal behavior and thermophysical properties of the sample by measuring the difference in heat absorption and release between the sample and the reference material during heating or cooling. The basic principle is to study the thermal physical properties of a sample and a reference by measuring the difference in heat flux during temperature changes. When the sample and reference material experience an increase or decrease in temperature, the sample will absorb or release heat. The instrument obtains thermal analysis data of the sample by monitoring the difference in heat flux between the sample and the reference material, and recording the relationship between this difference and temperature changes.

heat flow DSCThe specific working process:
1. Heating or cooling process:
At the beginning of the experiment, the sample and reference material are heated or cooled simultaneously. The instrument precisely controls the rate of temperature change to keep the temperature changes of the sample and reference consistent.
2. Measurement of Heat Flow Differences:
The amount of heat absorbed or released by the sample and reference material is detected by a heat flow sensor (usually a thermocouple) and compared with the heat flow of the reference material. In this way, the instrument can record the heat absorption or release process of the sample.
3. Signal processing and analysis:
The measured heat flux difference signal is amplified and processed by an electronic system, and output as a heat flux temperature curve (DSC curve). These curves can display the thermal properties of the sample, such as phase transition, chemical reaction, and thermal stability, at different temperatures.
4. Data interpretation:
By analyzing the DSC curve obtained, researchers can infer key thermophysical parameters such as the melting point, glass transition temperature, and crystallization temperature of the sample. In addition, DSC can also be used to analyze the reaction heat and thermal stability of samples.
Structural composition:
1. Sample and reference material compartment:
The samples and reference materials are placed in two identical compartments with heating or cooling devices that can precisely control temperature changes.
2. Heating/cooling system:
This system is responsible for heating or cooling samples and reference materials, usually using methods such as electric heating and liquid nitrogen cooling to control temperature changes.
3. Heat flow sensor:
Heat flow sensors are used to detect the difference in heat flow between samples and reference materials. Common sensors include thermocouples, thermopiles, etc. Sensors can accurately measure changes in heat flow and transmit signals to data processing systems.
4. Temperature control and detection system:
The temperature control system is responsible for accurately adjusting the temperature of the sample and reference material to ensure the stability of temperature changes during the experimental process. The temperature detection system monitors the temperature changes of the sample in real time through precision temperature sensors.
5. Data processing and analysis system:
The system processes the signals obtained from the heat flow sensor, outputs DSC curves, and further analyzes them through software. Modern thermal flow DSC is usually equipped with specialized analysis software that can perform data fitting, thermal characteristic calculation, and result display.
Application:
1. Materials Science:
Widely used in the field of materials science, especially in the research of polymer materials, metal alloys, and composite materials. DSC can be used to analyze the melting point, glass transition temperature, crystallization behavior, and thermal stability of materials. This is of great significance for the development and optimization of new materials.
2. Pharmaceutical industry:
In the pharmaceutical industry, it is used to study the thermal stability, phase transition behavior, and solubility of drugs. Especially in the study of drug crystal forms, solid dispersions, etc., DSC can provide important thermal analysis data to help researchers understand the physical and chemical properties of drugs.
3. Food industry:
The application of DSC technology in the food industry is mainly reflected in the analysis of food heat treatment processes, research on ingredient changes, and quality control. For example, studying the melting behavior and thermal stability of food components such as oils, sugars, and starch can provide theoretical basis for food processing.
4. Environmental Science:
Can be used for pollutant research in environmental science, especially for the detection of water quality, air quality, and harmful substances in soil. Through DSC analysis, the changing characteristics of environmental pollutants at different temperatures can be understood, providing reference for environmental governance.
5. Polymer and polymer research:
The research on polymer materials cannot be separated from thermal analysis, which can accurately measure the glass transition temperature, melting point, and crystallization behavior of polymers, thereby helping to optimize the processing technology and properties of polymers.
Advantages of thermal flow differential scanning calorimeter:
1. High sensitivity:
It has high sensitivity and can detect extremely small changes in heat flux, making it suitable for studying small thermal effects and reaction processes at high temperatures.
2. Accurate heat flow measurement:
Compared to other types of thermal analysis instruments, it can provide more accurate heat flow measurements, especially in measuring thermal reactions with small differences.
3. Wide range of applications:
Suitable for various types of materials and samples, it can provide data support for multiple disciplines and has a wide range of applications.
4. Pollution free analysis:
Due to the absence of chemical reactions, the analysis process does not cause contamination to the sample, thus obtaining pure thermal property data.
